African Peanut Soup

  • 1 tbsp. canola oil
  • 1 onion, chopped
  • 2 ribs celery, chopped
  • 2 carrots, chopped
  • 1 clove garlic, minced
  • 1 tbsp. grated ginger
  • 3 c. reduced-sodium vegetable broth
  • 1/2 c. creamy natural unsalted peanut butter
  • 2 tbsp. freshly squeezed lemon juice
  • 2 tbsp. chopped unsalted peanuts
  • 2 tbsp. chopped fresh cilantro

Directions

    1. Step 1Heat the oil in a large pot or Dutch oven over medium-high heat. Add the onion, celery, and carrots. Cook, stirring occasionally, for 5 minutes, or until the onion softens.
    2. Step 2Add the garlic, ginger, and 2 cups of the broth. Reduce the heat to low, cover, and simmer for 30 minutes, or until the vegetables are very tender.
    3. Step 3Transfer the soup to a food processor fitted with a metal blade or a blender (in batches, if necessary). Process until smooth.
    4. Step 4Return the soup to the pot and stir in the peanut butter, lemon juice, and remaining 1 cup broth. Cook for 5 minutes, or until the peanut butter melts and the flavors blend.
    5. Step 5Garnish each serving with the chopped nuts and cilantro.
MAKE IT A FLAT BELLY DIET MEAL: Serve with a baked sweet potato (103) and 1/2 cup cooked greens (25).
