American Mandarin Chicken

  • 1 tbsp. olive oil
  • 4 boneless, skinless chicken breast halves (about 1 pound)
  • 1 box (6 ounces) rice pilaf mix
  • 1 clove garlic, minced
  • 2 1/2 c. reduced-sodium chicken broth
  • 1 can (6 ounces) mandarin oranges, drained
  • 2 scallions, sliced
  • 1 tbsp. chopped fresh cilantro

Directions

    1. Step 1Warm the oil in a large skillet over medium to high heat. When hot, add the chicken and cook for about 5 minutes per side, or until lightly golden. Add the rice mix and garlic and continue cooking until the grains turn golden. Add the broth and heat just until boiling, then cover the skillet and reduce the heat to low.
    2. Step 2Simmer for 25 to 30 minutes, or until the rice is tender and a thermometer inserted in the thickest part of the chicken registers 160°F and the juices run clear. Remove from the heat and add the oranges, tossing gently. Top with the scallions and cilantro and serve.
