Shrimp and Fennel Salad

  • 4 grapefruits
  • 1 lb. cooked, shelled, and deveined shrimp
  • 2 bulb fennel
  • 1/2 c. chopped cilantro leaves
  • 3 tbsp. extra-virgin olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper


    1. Step 1Cut peel and white pith from grapefruit; discard. Holding grapefruit, one at a time, over large bowl, cut out segments between membranes.
    2. Step 2Add shrimp, fennel, cilantro, olive oil, salt, and pepper to bowl. Toss gently.
